Cooking Cajun: Cajun Men Cook! We learn it at a young age in the fishing and hunting camps, observing our parents, attending festivals and family gatherings where food is always the center point, and enjoying the many great restaurants we have in Acadiana. Acadiana is the home of the Cajun people, the descendents of the Acadians, who settled along the bayous and prairies of southwest Louisiana after their expulsion from Acadie (Nova Scotia) in 1755. It is a place of the incredibly rich musical, cultural and culinary traditions of the Cajuns and Creoles, and is a place like no other. My Dad cooked for a living and he loved it because he saw how much enjoyment food gave people. I never spent a lot of time cooking until after he passed away. Oh what I would give to have a few hours in the kitchen with him today… Here’s to you Big Bob!
